  • Preheat oven to 350F.
  • In a small bowl, combine Paleo Baking Flour, baking soda, and salt; set aside.
  • In a large bowl, mix together coconut oil with Swerve Sweetener – Granular until creamy. Add egg and vanilla extract well. Add dry ingredients and Natierra Organic Cacao Nibs and mix to combine.
  • Portion onto prepared baking sheets, about 2 Tbsp per cookie.
  • Bake until edges are golden-brown or for about 10-12 minutes.
  • Let the cookies cool slightly on baking sheet, then move to a rack to cool completely.
